So i made these cupcakes for Kevin's birthday. I am not showing off any photos of my cupcakes though because quite frankly, they were really ugly. They tasted amazing, where super sloppy and I devoured them, but meringue is not my best friend and I have still yet to figure out how to get the right whipped constancy that all the recipes claim is so easy to obtain. Either way though, you should try this recipe. It's seriously awesome.
I love Joy The Baker her recipes are obtainable, creative and she is pretty entertaining. She takes pretty photos as well so that's always nice.
I had a craving for something sweet and not much in the house so here we are! I saw a recipe for chocolate covered banana's before and not that you really need one. You can use whatever chocolate you want (maybe mix 2 different type), add some peanut butter, (i used almond butter). Melt in microwave stirring every 30 seconds to avoid burning. I chopped up my banana's, dipped them in the chocolate and laid them out on parchment paper. Put something underneath like a cookie sheet though so you can move them. After dipping I topped them with some sweetened coconut, you could also try spices, maybe some cayenne for a kick. Put them in the freezer for at least an hour and enjoy!
These are the tastiest maple cookie's i've ever had. They remind me a little bit of the brown sugar sea-salt cookies I have made a few times except super moist and well, maple flavored. I used Mark Bittman's recipe from 'How to Cook Everything Vegetarian'. I would have loved to smear some buttercream frosting on them if I had some milk in the house. These cookies are super simple and light tasting. Just yum! I believe Kevin said something along the lines of "oh yea..." while shacking his head yes while we proceeded to eat a almost a dozen in one night. :)
My mom sent me an unhealthy amount of chocolate bars, which included a package of butterfingers. Now I'm not one for those candy bars. I like how they taste but i hate the way these feel in your teeth, they stick and feel gross. I get a nasty feeling when I think about using my nail to dig it out of my teeth (and probably new cavity). It's a similar reaction to Sunny D. ewww. remember how DISGUSTING that made your teeth feel?! I need to brush now just to forget the memory. ANYWAYS, this blog isn't about crappy butterfingers cookies, its about AWESOME butterfingers cookies. These are really really really good. Here's the recipe I followed. It's amazing how many recipes are out there to use virtually anything. I knew i could make those butterfingers useful. The recipe is heavy on peanut butter and thats the general over riding taste I would say. They were delicious!
Kevin says "it took all the good parts of a butterfinger & left behind all of the bad things. Which is key when one does not have dental insurance."
Oven roasted potatoes are so delicious and easy to make. I used red potatoes, chopped them up, coated them with olive oil, salt, pepper and rosemary and baked them at 400 for about an hour, occasionally moving them around the pan. Couldn't be easier and really tasty! Unfortunately i am posted this a few days after the matter so we cant remember what Kevin said, but he really like them. :)
I made chocolate covered strawberries tonight. I don't really know why...well i do i suppose. i saw some strawberries on sale and realized I had some chocolate chips in my freezer. I used 1/2 semi-sweet chips & 1/2 peanut butter chips and a table spoon of shortening over low heat, consistently stirring and then dipped my strawberries and laid them on parchment paper. Kevin continued to give a yes nod while eating these.
